Yukon Gold Mashed Potatoes

5 lbs. yukon gold potatoes
2 1/2 cups whipping cream
2 sticks unsalted butter
4 teaspoon salt
1/8 teaspoon nutmeg
3/4 teaspoon white pepper
1/4 bunch chives or green onions
  1. To prepare, make sure your butter is out of the fridge. Then begin to peel the potatoes and cut into 2-inch chunks (soak them in water if you're not ready to cook)
  2. Take a pot large enough to hold potatoes and cover with water 1/2 inch above the level of potatoes. Bring to a boil and cook potatoes until a fork can easily go through them (and no more)
  3. While potatoes are cooking, bring cream to a low simmer in a small saucepan
  4. Once potatoes are done, drain them into a colander and then rice or grate them a few at a time into a large bowl
  5. When you are done ricing, add all the hot cream and butter and stir with a whisk until smooth
  6. Season to taste with kosher salt and white pepper. Fold in chives and 1/4 cup of good extra virgin olive oil just before serving
