Turkey & Black Bean Chili

1 yellow onion diced
3 medium carrots 1/2'' chunks
1 bell pepper
4 Tbsp. vegetable oil
1 can tomato paste
2 Tbsp. garlic
1 quart chicken broth
1 can diced tomatoes strained

1 teaspoon cumin

3 cans black beans
1 bunch cilantro
pinch of kosher salt
tortilla chips

scoop of sour cream
1.5 lbs cooked turkey
  1. If you still have leftover turkey after the holiday and are looking for a good way to create something, this chili is a perfect option. First, dice your onions, carrots and bell peppers and place them on medium heat in a pot until soft (approximately 8 minutes).
  2. Add your fresh chopped garlic and sauté for 1 minute. Add the can of tomato paste and sauté for 2 more minutes until vegetables are coated and caramelized.
  3. Add your chicken broth, diced tomatoes, Ancho chilies, and spices along with the stems from your bunch of cilantro. To make it easy to remove the stems, tie them up with butcher twine and tie the other end to the handle on the pot. Simmer all of this for 30 minutes. At this point, remove the cilantro and throw half of it in your blender and the other half in the garbage. Take the chilis out of the broth and add them to the blender as well. Puree on high until completely smooth and pour back in to the soup pot along with your diced leftover turkey and the canned black beans.
  4. Season to taste and serve each bowl with a few tablespoons of diced onion, sour cream, fresh chopped cilantro, and tortilla chips
